I decided to take pieces of different recipes and give it a try today. The result was delicious!
1) Blend the following:
1/3 cup raw honey
1/2 cup olive oil
1/2 cup coconut palm sugar (regular granulated or brown sugar would mostly be fine.)
1 tsp vanilla
2 Tablespoons ground flax seed
2/3 cup almond flour
*1 cup gluten free flour blend
1/3 cup cocoa
1 tsp xantham gum
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
(Approximately one large or 2 medium zucchinis blended gently in food processor.)
Add 1/2 12 ounce bag semi-sweet chocolate chips.
Pour into greased 8x8 pan.
Top with rest of chips, pushing slightly, gently into batter.
Bake at 350 degrees for 45 minutes.
*Gluten free flour blend: 2 parts rice flour, 2/3 part potato starch, 1/3 part tapioca flour
